Abstract
► In vitro antibacterial activity of Cedrus deodara was evaluated. ► The extract had a remarkable antiseptic capacity in a food system. ► Antibacterial mechanism was explained by growth curve and TEM of S. aureus. ► Shikimic acid was isolated and identified as the main antibacterial compound.
