Abstract
⺠In vitro antibacterial activity of Cedrus deodara was evaluated. ⺠The extract had a remarkable antiseptic capacity in a food system. ⺠Antibacterial mechanism was explained by growth curve and TEM of S. aureus. ⺠Shikimic acid was isolated and identified as the main antibacterial compound.
