Abstract
⺠Several strains were able to grow at 10% of NaCl. ⺠All the strains showed a strong proteolytic activity towards myofibrillar proteins in model system. ⺠S. cerevisiae affected the FAA accumulation, although the effect was different depending on strains and protein fraction. ⺠3-methyl 1-butanol was the most notable branched chain alcohol produced in the model systems.
