Abstract
► Several strains were able to grow at 10% of NaCl. ► All the strains showed a strong proteolytic activity towards myofibrillar proteins in model system. ► S. cerevisiae affected the FAA accumulation, although the effect was different depending on strains and protein fraction. ► 3-methyl 1-butanol was the most notable branched chain alcohol produced in the model systems.
