Abstract
⺠Staphylococcus aureus must acclimate to cold temperatures before growing in food. ⺠Cold acclimation induced chaperone accumulation or an increase in glycolytic enzyme production. ⺠Both molecular mechanisms conferred crossed resistance to acid pH or nisin.
