Abstract
⺠We analyse β-glucosidase activity and terpenes profile in Muscat wines fermented by different Saccharomyces species and hybrids. ⺠We examine changes in geraniol by bioconversion into linalool and α-terpineol using synthetic medium. ⺠Geraniol uptake and bioconversion rates in wines change depending on the different Saccharomyces species and hybrids.
