Abstract
► We analyse β-glucosidase activity and terpenes profile in Muscat wines fermented by different Saccharomyces species and hybrids. ► We examine changes in geraniol by bioconversion into linalool and α-terpineol using synthetic medium. ► Geraniol uptake and bioconversion rates in wines change depending on the different Saccharomyces species and hybrids.
