Abstract
► Impact of glycated pea proteins on gut microbiota is reported for the first time. ► The glycated pea proteins changed the composition of gut bacteria. ► The glycated pea proteins altered the metabolic activity of gut bacteria. ► These glycated proteins are potential beneficial modulators of gut microbiota. ► Data necessitate updating the role of these proteins in gut homeostasis.
