Abstract
► We have applied mtDNA-RFLP to evaluate the dominance of the inoculated yeast in industrial fermentations in about 7 h. ► This technique was applied directly to samples of fermenting wine without previously isolating yeast colonies. ► When restriction patterns of the samples and inoculated strain were identical, the results of the RFLP test were positive and inoculated strain was present in majority. ► The wine producer would be able to identify in time the unwanted evolution of the yeast population.
