Abstract
⺠Two typologies of RFID tags were tested all performing a correct reading. ⺠During maturation quality param. (pH, moisture, chlorides, fat) was statistically different. ⺠PLSDA models well estimate maturation degree by spectral and chemical data. ⺠The tracing and quality information are combined on a web platform.
