•There is a strong variation in household consumption patterns along the gradient of the organic penetration rate.•Regular organic consumers have a 'quality strategy' that affects both organic and non-organic purchases.•Regarding the food expenditures, the variation in consumption patterns partially compensates for the additional costs of more organic purchases.
