► Considerable preference heterogeneity was found among respondents, validating the use of random parameter logit model. ► While taste is the dominating attribute driving consumers' WTP for soy foods, consumers do respond to the health claim. ► Yet, consumers do not seem to be recognizing soy protein as the link to health benefits of soy foods.
