Abstract
												⺠Per capita diets are analyzed using resource-based cereal-equivalent measures. ⺠Diet changes are disaggregated by food category. ⺠Diet upgrades due to development are found to require a fivefold increase in resources. ⺠Diet composition per capita is found to stabilize at high incomes. ⺠Food production per capita remains insufficient in land-scarce countries.
