Inverse analysis is a mathematical method used in predictive microbiology to determine the kinetic parameters of microbial growth and survival in foods. The traditional approach in inverse analysis relies on isothermal experiments that are time-consuming and labor-intensive, and errors are accumulated and propagated in each step of data collection and analysis. One-step dynamic analysis is a new mathematical method that directly constructs a tertiary model and determines the kinetic parameters from dynamic experiments. This method is accurate and efficient, and can replace the traditional method for inverse analysis in predictive microbiology.
