Abstract
This review looks at the research that has been done to understand the main problems that the lactose processing industry faces from a fundamental point of view and hence to the solutions that have been found or to the suggestions for addressing the problems. It also points to areas where further work is needed. Problems looked at include crystallisation issues of fines production, clusters, yield and habit and drying issues that can lead to transportation issues of blocked lines and caking in bags.
