Abstract
⺠Technological and safety-related properties were analyzed in a CNS collection. ⺠S. equorum strains were good candidates to be selected as starter cultures. ⺠S. carnosus and most of S equorum strains were sensitive to the antibiotics tested. ⺠S. carnosus strains produced the biogenic amine tyramine.
