Abstract
► Technological and safety-related properties were analyzed in a CNS collection. ► S. equorum strains were good candidates to be selected as starter cultures. ► S. carnosus and most of S equorum strains were sensitive to the antibiotics tested. ► S. carnosus strains produced the biogenic amine tyramine.
