► 24 carcasses were used to determine the nutrient composition of BAM cuts. ► Seven BAM cuts from three quality grades qualified for USDA Lean. ► Seven Select BAM cuts qualified for USDA Extra Lean. ► All BAM cuts from all three quality grades had less than 95 mg of cholesterol.
