Abstract
⺠The effect of Rosa canina L. on the oxidative stability in frankfurters was studied. ⺠Rosa canina L. inhibited lipid oxidation and protein oxidation. ⺠Rosa canina L. only slightly affected the colour stability and textural properties. ⺠Rosa canina L. could be used as a natural antioxidant in frankfurters. ⺠But sodium nitrite cannot be entirely replaced by Rosa canina L.
