Abstract
► The effect of Rosa canina L. on the oxidative stability in frankfurters was studied. ► Rosa canina L. inhibited lipid oxidation and protein oxidation. ► Rosa canina L. only slightly affected the colour stability and textural properties. ► Rosa canina L. could be used as a natural antioxidant in frankfurters. ► But sodium nitrite cannot be entirely replaced by Rosa canina L.
