Abstract
⺠Development of a shelf-stable chicken porridge product. ⺠Quality characteristics of ginseng chicken porridge during storage. ⺠Min. shelf-life was 24 weeks at 25 °C. ⺠Any microbiological hazard wasn't observed during storage. ⺠Weakening texture of the boiled rice was the most apparent quality deterioration.
