Abstract
► The effect of IGF-II genotype in dry-cured hams and shoulders was studied. ► The mutant genotype caused a decrease in the fat deposition in both products. ► The dry-cured ham's sensory traits were unaffected by the IGF-II genotype. ► In dry-cured shoulder ancestral IGF-II genotype showed better sensory traits' scores.
