Abstract
⺠Muscle cortisol level is related to the pork quality traits and sensory quality of cooked pork. ⺠Measurement of cortisol levels is not very informative for the detection of chronic stress situations. ⺠Measurement of cortisol levels may not be a good indicator of meat quality in pigs.
