Abstract
⺠Effect of dietary magnesium supplementation on pork packaged in modified atmosphere. ⺠Forty gilts (P Ã (LR Ã LW)) were supplemented for five days prior to slaughter. ⺠The sources of Mg used were Mg oxide, Mg sulphate and Mg chelate. ⺠Dietary Mg supplementation did not affect 24-h pH, colour, and WBSF values. ⺠Mg chelate supplementation may improve fluid loss and visual assessment on MAP pork.
