Abstract
► Effect of dietary magnesium supplementation on pork packaged in modified atmosphere. ► Forty gilts (P × (LR × LW)) were supplemented for five days prior to slaughter. ► The sources of Mg used were Mg oxide, Mg sulphate and Mg chelate. ► Dietary Mg supplementation did not affect 24-h pH, colour, and WBSF values. ► Mg chelate supplementation may improve fluid loss and visual assessment on MAP pork.
