Abstract
⺠This study showed lipid in marine fish muscle was reduced in presence of oxidant. ⺠Oxidized lipid products in fish muscle elevated when exposed to hydrogen peroxide. ⺠Oxidized lipid products released were not dependent on dose or time of exposure. ⺠Isoprostanes 'gold standard' of oxidative stress are measurable in fish muscle.
