Abstract
► This study showed lipid in marine fish muscle was reduced in presence of oxidant. ► Oxidized lipid products in fish muscle elevated when exposed to hydrogen peroxide. ► Oxidized lipid products released were not dependent on dose or time of exposure. ► Isoprostanes 'gold standard' of oxidative stress are measurable in fish muscle.
