Abstract
⺠Effective methods to reduce or eliminate food allergenicity has been investigated. ⺠Few reports have summarized information on the progress made with food irradiation. ⺠The relationship between allergenicity and physical processing was measured. ⺠Our model revealed the impact that irradiation procedures have on allergenic potential.
