Abstract
⺠Acrylamide is a component of roasted coffee and baked and fried foods prepared at high temperatures. ⺠We have assessed the carcinogenicity of acrylamide in mice and rats. ⺠Tumors were observed in multiple organs from both sexes and species of rodents.
