Abstract
⺠Type of food and cooking preparation influence bioaccessibility of Hg, Cd and As. âºCancer pagurus brown meat and grilled Aphanopus carbo should be moderately consumed. âºC. pagurus muscle and fried/steamed A. carbo consumption should be encouraged. ⺠Validation of in vitro digestion methods for different samples is urgently needed. âºIn vitro digestion models provide crucial information for food risk assessment.
