Abstract
⺠Salting time did not affect yeast counts. ⺠Debaryomyces hanseni was the most abundant species isolated. ⺠Five strains of D. hanseni showed proteolytic and lipolytic activities. ⺠D. hanseni could be suitable for use as starter culture.
