Abstract
► We have isolated Hanseniaspora uvarum as major wild yeasts from Campbell Early grape. ► H. uvarum participated in the early stage of wine fermentation. ► H. uvarum SS6 showed a strong resistance to fermentation conditions. ► H. uvarum SS6 showed beneficial effects in winemaking using Campbell Early must.
