Abstract
⺠We have isolated Hanseniaspora uvarum as major wild yeasts from Campbell Early grape. ⺠H. uvarum participated in the early stage of wine fermentation. ⺠H. uvarum SS6 showed a strong resistance to fermentation conditions. ⺠H. uvarum SS6 showed beneficial effects in winemaking using Campbell Early must.
