Abstract
⺠This study developed a method for global gene expression of O. oeni strains. ⺠RAP-PCR is a useful tool to study O. oeni strains behavior under wine conditions. ⺠RAP-PCR can be used to select markers for quality and safety control. ⺠O. oeni regional strains showed more variation on transcription profiles. ⺠Malolactic starter strains showed more restricted transcription profiles.
