► Levansucrase of lactobacilli converts raffinose family oligosaccharides to αGOS. ► Levansucrase and intracellular α-galactosidases allow complete metabolism of RFOs. ► Cultures with levansucrase and α-Gal allow controlled conversion of RFOs to αGOS. ► Conversion of RFOs was demonstrated in gluten-free bread dough as food model system.
