Abstract
⺠Levansucrase of lactobacilli converts raffinose family oligosaccharides to αGOS. ⺠Levansucrase and intracellular α-galactosidases allow complete metabolism of RFOs. ⺠Cultures with levansucrase and α-Gal allow controlled conversion of RFOs to αGOS. ⺠Conversion of RFOs was demonstrated in gluten-free bread dough as food model system.
