Abstract
⺠GSH protects lactic acid bacteria against cold stress in a way of metabolic control. ⺠Microenvironment such as ATP level and pHi are improved by GSH under cold stress. ⺠Multi-control of GSH against induced cross-stresses is found by proteomics analysis.
