Abstract
⺠First molecular biology based investigation of nunu processing associated LAB and yeast. ⺠Lactobacillus fermentum indigenous to nunu. âºÂ Saccharomyces cerevisiae and Pichia kudriavzevii indigenous to nunu. ⺠Putatively novel Lactoccous spp. isolated. ⺠An important step towards developing starter cultures for nunu fermentation.
