Abstract
⺠Analysis of microbial succession and metabolites during saeu-jeot fermentation. ⺠Bacteria, not archaea, were primarily responsible for saeu-jeot fermentation. ⺠Halanaerobium might be related to abnormal seafood fermentation or spoilage. ⺠This will provide insights into microbial succession and metabolites of saeu-jeot.
