Abstract
⺠Seven microorganisms were antagonistic to foodborne pathogens on fresh-cut fruit. ⺠CPA-7, the most effective, was identified as Pseudomonas graminis. ⺠It reduced Escherichia coli O157:H7, Salmonella and Listeria innocua on fresh-cut apple and peach. ⺠CPA-7 needs to be at the same load than pathogens to be effective.
