Abstract
⺠Substrate utilization of 10 species of cold-tolerant Clostridium sp. was studied. ⺠The substrate utilization is likely related to their blown pack spoilage potential. ⺠In meat juice medium, all 10 species were able to utilize glucose and glycogen. ⺠Five species were able to utilize lactate, two of which were to considerable amount. ⺠Only Clostridium frigidicarnis utilized a wide range and considerable amount of amino acids.
