Abstract
► Substrate utilization of 10 species of cold-tolerant Clostridium sp. was studied. ► The substrate utilization is likely related to their blown pack spoilage potential. ► In meat juice medium, all 10 species were able to utilize glucose and glycogen. ► Five species were able to utilize lactate, two of which were to considerable amount. ► Only Clostridium frigidicarnis utilized a wide range and considerable amount of amino acids.
