Abstract
⺠Lactobacillus pentosus was the main lactic acid bacterium in Aloreña table olives. ⺠Pediococcus parvulus and Leuconostoc pseudomesenteroides were less abundant. ⺠Many lactobacilli showed interesting technological properties. ⺠Selected lactobacilli and leuconostocs were acid and bile salt tolerant.
