Abstract
► Lactobacillus pentosus was the main lactic acid bacterium in Aloreña table olives. ► Pediococcus parvulus and Leuconostoc pseudomesenteroides were less abundant. ► Many lactobacilli showed interesting technological properties. ► Selected lactobacilli and leuconostocs were acid and bile salt tolerant.
