Abstract
► Enterococcus mundtii controlled the growth of Listeria monocytogenes in broth culture. ► Efficacy depended on the initial concentrations. ► The cell-free supernatant also controlled growth of L. monocytogenes. ► E. mundtii concentrations need to be high to maintain control of L. monocytogenes. ► Control was also shown on cold smoked salmon.
