Abstract
⺠First study on the effects of gamma and e-beam irradiation on Tuber melanosporum truffles. ⺠All radiation treatments decreased microbial groups below detection limit. ⺠Two species of yeasts survived the irradiation treatment. ⺠Shelf life ended due to a visible yeast growth. ⺠Irradiation treatments did not preserve quality characteristics of T. melanosporum beyond 28 days.
