► First study on the effects of gamma and e-beam irradiation on Tuber melanosporum truffles. ► All radiation treatments decreased microbial groups below detection limit. ► Two species of yeasts survived the irradiation treatment. ► Shelf life ended due to a visible yeast growth. ► Irradiation treatments did not preserve quality characteristics of T. melanosporum beyond 28 days.
