Abstract
► The antilisterial efficacy of four carbohydrate coatings was compared on deli turkey. ► Pectin-based antimicrobial coatings were more effective than other coatings tested. ► Pre-frozen storage enhances the antilisterial activity of pectin-based treatments. ► Freezing combined with edible coating can minimize risks of foodborne listeriosis.
