Abstract
⺠The antilisterial efficacy of four carbohydrate coatings was compared on deli turkey. ⺠Pectin-based antimicrobial coatings were more effective than other coatings tested. ⺠Pre-frozen storage enhances the antilisterial activity of pectin-based treatments. ⺠Freezing combined with edible coating can minimize risks of foodborne listeriosis.
