Abstract
⺠Lactobacillus plantarum I91 and Lactobacillus paracasei I90 did not change cheese composition. ⺠Peptidolysis was slightly increased in lactobacilli containing cheeses. ⺠Adjunct treated cheeses were at least as accepted as the controls by consumers. ⺠Oral administration induced benefic health effects at the gut mucosa of mice.
