Abstract
► Cold atm. pressure plasma inactivates L. innocua on sliced bresaola. ► Treatment at 15.5-62 W for 2-60 s reduced L. innocua by up to 1.6 ± 0.5 log10 cfu/g. ► Multiple plasma treatments increased the reduction L. innocua. ► Reduced redness by 40-70% and increased TBARS by up to 180% after 14 days at 5 °C.
