Abstract
⺠Enzymatic activities of several strains of Geotrichum candidum were studied. ⺠Most of the strains showed weak extracellular proteolytic activity. ⺠In general, extracellular lipolytic activity was high, whereas cell-bound lipase activity showed lower values. ⺠The strains showed the highest aminopeptidase activity toward the substrate Lys-p-nitroanilide. ⺠Several strains of G. candidum showing appropriated technological aptitude could be used in cheese-manufacture.
