Abstract
⺠The mycelium growth of 12 fungal isolates on yogurt was monitored. ⺠The single and combined effects of temperature and inoculum size were modeled. ⺠Validation studies showed a good performance of the developed models. ⺠The use of the developed models as tools for improving quality control in yogurt productions is discussed.
