Abstract
► The mycelium growth of 12 fungal isolates on yogurt was monitored. ► The single and combined effects of temperature and inoculum size were modeled. ► Validation studies showed a good performance of the developed models. ► The use of the developed models as tools for improving quality control in yogurt productions is discussed.
