Abstract
► We studied the effect of sorbitol and xylitol on growth of xerophilic fungi at different aw and temperatures. ► In general, the polyols shortened the germination times and increased the growth rates. ► The effect on germination was higher at low aw, while growth was more affected at high aw levels.
