Abstract
► The Pad-decarboxylation system in germinating spores of Aspergillus niger degrades food preservatives. ► Decarboxylation required a carboxylic acid with an alkenyl double bond at C2 and C4. ► 2,3,4,5,6-Pentafluorocinnamic acid was a substrate but had no inducer function. ► Several compounds block decarboxylation and may serve to reduce food spoilage by moulds.
