Abstract
												⺠The Central Limit Theorem was applied in understanding microbial risk in foods. ⺠High numbers of servings decrease the Coefficient of Variation of food-borne diseases. ⺠The CLT hypothesis was proven by in silico and in vivo data. ⺠Classical statistics were successfully compared with probabilistic risk assessment.
