Abstract
⺠Development of farm to fork risk assessment model for patulin in apple juice. ⺠Storage of apples under controlled atmosphere contributes to patulin contamination. ⺠Higher probability of highly contaminated apple juices from January onwards. ⺠When apples from controlled atmosphere are used a sorting step should be included. ⺠Also deck storage after cold storage is a CCP for patulin accumulation.
