Abstract
⺠Immersed heating coil provided thermal inactivation data for 4 enterococci species. ⺠D and z values determined for 8 thermoduric enterococci isolates and a control culture for 5 temperatures. ⺠The most heat resistant species were E. durans, E. faecium and E. hirae ⺠Log10 reductions predicted for HTST pasteurisation conditions.
