Abstract
►Control of the potential health hazards of smoked salmon by irradiation was studied. ►Irradiation at a dose of 3 kGy destroyed 6.59 log cfu g− 1 of L. monocytogenes. ►Irradiation dose of 1 kGy destroyed 6.05 log cfu g− 1 of V. parahaemolyticus. ►Irradiation significantly decreased the counts of microbial populations. ►The reduction of microbial counts decreased the formation of biogenic amines.
