Abstract
âºControl of the potential health hazards of smoked salmon by irradiation was studied. âºIrradiation at a dose of 3 kGy destroyed 6.59 log cfu gâ 1 of L. monocytogenes. âºIrradiation dose of 1 kGy destroyed 6.05 log cfu gâ 1 of V. parahaemolyticus. âºIrradiation significantly decreased the counts of microbial populations. âºThe reduction of microbial counts decreased the formation of biogenic amines.
