► Strain, growth Tª and buffer pH did not change Cronobacter sakazakii ultrasound resistance. ► Growth phase, buffer aw and food matrices influenced C. sakazakii ultrasound resistance. ► Energy transferred by UW determined the lethality regardless of amplitude and pressure. ► Damage to outer membrane preceded microbial death.
