Abstract
⺠Strain, growth Tª and buffer pH did not change Cronobacter sakazakii ultrasound resistance. ⺠Growth phase, buffer aw and food matrices influenced C. sakazakii ultrasound resistance. ⺠Energy transferred by UW determined the lethality regardless of amplitude and pressure. ⺠Damage to outer membrane preceded microbial death.
