Abstract
⺠Carvacrol, trans-cinnamaldehyde, eugenol and β-resorcylic acid rapidly inactivated Salmonella enterica spp. on plum tomatoes. ⺠All plant molecules were more effective than chlorine in reducing Salmonella on tomatoes. ⺠None of the treatments had any effect on the red color of tomatoes.
