Abstract
►Clary sage, juniper, lemon and marjoram essential oils inhibit spoilage yeasts. ►Combination of juniper and clary sage resulted in additive effect. ►Combination of α-pinene with linalool resulted in additive effect. ►Combination of α-pinene and limonene led to synergism. ►Adding lemon essential oil to clear apple juice a new, harmonic taste was achieved.
