Abstract
⺠Aloreña green table olives are a denomination of protection from Southern Spain. ⺠They are fermented in a traditional way without lye treatment. ⺠Three fermentation conditions were studied (cold fermentation, vats, and tank). ⺠The fermentation includes complex populations: bacteria, archaea and yeasts. ⺠This microbiota strongly depends on fermentation conditions.
