Abstract
► Aloreña green table olives are a denomination of protection from Southern Spain. ► They are fermented in a traditional way without lye treatment. ► Three fermentation conditions were studied (cold fermentation, vats, and tank). ► The fermentation includes complex populations: bacteria, archaea and yeasts. ► This microbiota strongly depends on fermentation conditions.
